Crispbread x 3
Dijon mustard x 1tsp
Avocado x 1/4
Red onion x 1/4 chopped
Cottage cheese x 1/2 cup or 75gm Lemon juice
Rocket leaves or spinach x 30gm
Mash avocado with red onion and lemon juice. Spread crispbread with mustard then avocado mix. Top with cottage cheese then tomato and pepper.
The peppery rocket goes well with the onion and avocado.
